    So does it offer you a selection of canned tunes that are recomended for the cams,  exhaust etc your running...

    That's correct, then you can Auto tune off your canned tune. 
    That I'm doing now. 
    Any way of checking if o2 sensors are reading correctly?

    Same here on the TMax.  Load a canned tune that's 'close' to your config and then let the autotune system pull it into spot on over the course of 500-1000km.  I always check the results after say 250km as on the Tmax you can view a table of what has changed and by how much.  You would be surprised at how little things actually change in order to get to spot on as that canned maps from some places are pretty darn close to the ideal (so long as your O2 sensors are in good nick your good to go)

    I think I'll try find how to test the O2 sensors and go from there.

    When my O2's head west the bike normally throws up a 'your O2 is buggered error code'.
    Its hard to tell by just looking at them as they can be white from lean or black from a little rich.

    I doubt its the sensors.
    You had two crappy plugs so if it is the sensors it is both of them. If you had a good plug you could swap the sensors (if leads are the same length) and check for changes.
    Most decent tuning systems you can check a log of sensor voltage, but I don't think FP3 has that capability ?

    Yeah true, both plugs are as bad as each other and no codes come up. 
    Bloody Melbourne weather I can't take out often enough to test and get klms up
