You may need to fit  an Active Exhaust sensor eliminator, also for the O2 sensors & air cleaner if these sensors are removed.  If you turn on the ignition when one is unpluged you will log a code in the ECU, this code can be read out of the ECU by yourself but I think a dealer will need to clear it.  I found out the hard way when fitting my V&H pipes to my 07 FXDC.

I'm with you on not letting the dealer touch your bike Scotty. I had a dealership who couldn't even change my oil and fill it up properly.

Take your time and buy new Torca clamps (if u can) to eliminate any exhaust leaks.
