    the ribs was not falling off the bone but it was still soft and juicy
    the belly was like butter, slipped under the grill to set the crackle
    Both porks had a rub of White lightning with double garlic butter
    the ribs had a glaze of maple syrup, honey and strawberry jam

    the best chicken I have ever done, the skin was crispy, not leathery, just the hint of smoke and sweet as, the coating was something Japanese, medium spicy

    the start of a great cook is the ingredients
    here is the fresh garlic we grew in the garden, now to let it set for 4 weeks in the cupboard
    may smoke some of them later just to get some different flavors

    Looks good Soapbox.
    We like to grow heaps of garlic here (Tassie) as well. The rule of thumb is you plant it on the shortest day and harvest it on the longest day, so ours is still a coupla months off picking yet. Guess the rules about growing it depend on where you live.

    never grew it before, it was on the shelf in the garden shop so the wife grabbed it, were going tomorrow and see if there is any more, we use heaps in cooking, so will use it all, summer is bbq and garlic goes well in bbq
