yes new motors burn / consume a little however at 7500k should have bedded in and settled by now
out of curiosity, did you put amsoil in it or the dealer at service? if dealer would have thought theyd use the HD syn being under warranty?
I'd switch to the penrite and see how you go
my 08 fatty used to use a little when i was using the HD360 cooking oil but since switching to 20w60 mineral penrite diesel a few years back doesnt use anything and is just shy of 50k now.
lastly, be sure the motor is nice & hot when you check the level as oil expands as it gets hotter, i dont think the 2 minutes idling gives enough time for the oil to get to the point where it starts to expand and make a difference on the dipstick -  cold will show less on the stick compared to hot
some engines also will consume full syn oils as they are much thinner as well.

Idle the bike down for 2 minutes after riding is what Harley want you to  do for a hot oil reading and  that then equates to the correct reading when the oil is checked cold . It's in the M8 manual and SB1450 as well.
It's the best way with an M8.
My M8 uses no oil as I ran it in hard.
Went to Amsoil at 3000K's and again at the second service.

I gave the Amsoil to the dealer, they have no problem with using that instead of their HD oil. I had it put in at the second service so the bike had done about 1900kms at that stage. I actually gave them Amsoil in its different applications for all three holes. Amsoil either have really good marketing or it really is a great product. I tend to think its the latter, or perhaps both....

Amsoil must be made from gold or something as I priced a quart bottle (little less than a litre) and the NZ importer wanted $32 each, I use Penrite MC4 20w-50 full syn for the engine and can get it for around $50nz at Supercheap when on sale

Of course they have no problem with it. They’d draw a stripper with crayons on your tank too, if you want. Probably charge full mechanics rates for the privilege.
The point is if, in the likelihood of a major issue during the warranty ie engine failure, HD Aus/NZ will look at all factors.
    That’s my 2c.

no doubt Amsoil is a good oil however as I said, some engines running full syn will consume a bit of it cause it is so thin. It just happens
watch as you pour a 20w50 mineral oil VS 20w50 full syn, kinda like honey to water
My wifes car, 2 year old Mazda 6 was using a bit on full syn (Penrite hpr 5) however once changing to semi-syn the consumption stopped. car has less than 30k on it
by any chance have you retuned the ECM for pipes etc? if running too rich can dilute thus consume oil as well?

look at how many race teams use Amsoil.
Paul yes you probably need an oil top up but use the correct procedure to measure it first , and after you add oil cold HD still wants you to idle it for 2 minutes after a top up cold, it's  in the manual man.
    Cheers.
