What's the best solo seat with a backrest? I've been recommended Corbin and Mustang so far and I've heard the Mustang sits you too forward. I'm after a two piece option so I can add a pillion on occasions.

Rider backrests are going to push you slightly forward by the nature of human posture. The backrest metal bar is adjustable up and down but not front and back, although the back rest pad is adjustable.
