I have a 2014 Iron 883 and have had it since December 2013, It still has the stock pipes on it and it doesn't sound to bad. I was wanting to make it sound a bit more like a harley with out spending $$$ at the moment due to being put off work. So i was reading some article on another site and they say if you remove the plugs from inside the factory exhaust it will sound a lot louder. The thing i want to know is if i remove the plugs will there be anything else that I would need to do to the bike? basically what Im trying to say is if i do this is it going to affect and damage the bike.

What you're suggesting is removing the "baffles" which is akin to removing the muffler on a car. The bike is tuned with the exhausts in place and the back pressure they create, so it would certainly affect that tuning in some way, but it wont do any damage to the bike. How it would affect warranty though I have no idea.
I don't want this to sound condescending so please dont take it that way, but the end of the day, sure it will sound louder (anything will without a muffler), but you purchased the 883 not a 103, so it's gonna sound like an 883.
My suggestion, take the baffles out just so you can hear the bike running without them, but leave the baffles in place until you can afford a decent replacement exhaust.....then here's the pipes I'd be looking for:
