I have a drama with street bob will run fine occaisonally lose power if get off throtle to stop it cuts out but restarts sraight away but have to hold revs up any ideas cheers
As above clean IAC with carby clean and check the throttle blade stop screw as the 07 models had a bad lock tight that allows the torx 5 point screw to back off shutting the throttle plate fully. The crank sensor could be playing up as well but it does not sound like its the problem. Take it out and give it a clean. Did the bike log any codes after shut down.
1 check for fault codes
2 clean IAC. take air cleaner off and spray carby clean into the hole above throttle plate. catch crap that comes out onto a rag
3 clean crank sensor
4 if above doesnt help check under throttle body where cables go around the wheel (throttle plate shaft) that its touching the 5 pin torx screw. let the throttle snap back a few times to see and hear if its touching. dont fuck with it as its factory set and a nightmare to adjust

Have you got a piggy back tuner ? PC3 ect. Sounds like the IAC is gummed up use the thin tube that comes with the can dont be worried give it a good spray.
I just replaced the crank position sensor on mine (2007 FXDWG) as it was running rough at idle and eventually it got to the point that it'd stop and wouldn't restart for a while until cooled, then it get to the stage that it wouldn't start at all. It'd wind over but nothing else. I also had no codes and I was running an Arlen Ness Big Shot piggy back tuner, as soon as I removed the piggy back tuner the fault codes registered and it indicated a dodgy crank position sensor. Somehow with the piggy back tuner it would not let the fault codes come up. Hope that helps.
I had similar problem , took me a while to find was battery lead looked ok,
washer was blue shorting when motor at idle/low rpm cut out ,did it at the traffic lights a few ttimes started straight away . No fault codes came up
