If you're gonna go the dynotune route, then find a good dyno guy and use the tuner that he recommends/prefers.

Don't reacon you can go past the Thundermax as a tuner, they are not cheap but I picked up one on the Forum from Tassie and never looked back, they self tune and are awesome, V & H slip-ons S/E high flo kit and my Heritage flew....in Melbourne so can't advise you in Steak and Kidney so good luck but the stealers will NOT be cheap...

Firstly, good on you for using this site.  Perhaps you could put up your experiences when you find a tuner in Sydney and help others.  I'm in Radelaide; we are a smaller market again than Sydney but there are good tuners out there i'm sure.

I rekon if you look for a tuner (business) that you can build a relationship with would be good advice.  I looked up on the web authorised Dynojet dealers to narrow my choices for selection, then made a list of questions, went and met them, told them what I wanted to achieve and evaluated their respones accordingly.  In the end if you have no recommendations, then go with your gut feel, in the end it's how we have survived evoloution....

I haven't yet decided who i'll go with but if they realise you're not a time waster and understand you've got to spend some $$, they should look after you.  I initially was going to get a Power Commander V with a self tuning module, but after speaking with the dyno dudes, i'm going to invest in their time-after all once the bike is set up it shouldn't need to be touched unless I make changes.  Keeps it simple and keeps me riding, not fiddling about with settings etc.

    Good luck!

    Cheers
