I went to put on a 200 on my 07 streetbob & the guy said they would go on but they would balloon out on my 5-1/2" wheel making the ride suk

i have no idea about the sceaming eagle 200 but the 200 avon and metz are fine on a 5.5" rim, ive had them both and the fit the rim perfect and ride VERY VERY well

Sounds good, but did they cause any issues up inside the rear fender with any of the bolts and shit up in there?

I was told by someone who I presume to be a wanker that even a 180 wouldn't fit up because of the fender strut bolts........

I'm keen to throw a wider tyre under there once my Dunlop 160 wears out, so it'd be nice to know.....

Stocker on a street bob is 160, i presume you mean the SE180, which is stock on wideglide, not SE200?
180 is straight on, 200 take a lil work.

Ah. yes, to my knowledge it will fit in the guard but I know you will have to use button head set screws and acorn nuts to hold the rear fender on, and relocate the indicators

10,600 and its about due, doesnt seem to be a lot of choice in that size, its the front one that annoys me with its grinding.

Check this chart out it might help you make a decision.

    I fitted a 170/60x17 on my streetbob

It is the largest you can fit on a standard rim. Except SE180 made to fit standard rim

Mate I don't think a 200mm wide tyre will fit. I have the SE 180 on a 06 Dyna, lowered an inch....I assume the guards havent widened in recent years like the Softys did.

reckon I have 4mm clearance on each side in the rear guard  and yes there's plenty of wiring and bolt threads up inside for the tyre to hit if you bottom out.
