I bump into a bloke once a week and have a chat. The other day he told me he was doing up a 1979 Shovel and was tinkering with the carby to get it working properly.
Tonight I bumped into him again and he asked if I knew any Carby Specialist - he is happy to send it to whatever location for the best workmanship.
I told him I would post up to try and get some details (name / address / phone number) of any Carby Specialist's.
Recommendations?

Best fix would be a CV off a later model, you will be able to pick one up secondhand at your local HD dealer or off someone on here, one of the best changes i made to my shovel.
I'm with Houli.
I have run an S&S "B" and "E" which were both good carbs however eventually flogged out from vibrations. Currently running a CV and aircleaner from a '96 Evo and have had no problems since installing around 10 years back. Should be able to pick up a good cheap CV pretty easily . .
