2 throttle, 1 Clutch. 1 brake cable front and 1 for the rear. Unless your bike is DBW then only the clutch and brakes

By the time you typed away, you could have educated yourself and had a look at your own bike!

If you are going for SS braided stay away from the cheap ones. (Motion Pro etc) Use either the Harley Diamond Back, or Barnett. With the clutch cable be careful as some cables sold to suit Softail 00 onwards etc will not fit the later models due to the throw length of the inner cable. The 07 and later models came out with a longer inner cable. If you puty on the earlier type ( hard to get on) it will stretch like hell due to the excess strain placed on the inner cable. Also make sure that your brake cables are DOT approved (Should have a sticker) up near the banjo fitting. If it doesn't you may be in for trouble if you have a prang or get stickered by the Police. If you plan on changing them over your self pleanty of info in the Workshop section on bleeding the brakes. Only takes about a day to get done in the end. You should be able to get the cables from M&M in the US. Or email Luke at HH and see what price he can do them for. I don't know about the cost of fitting them though as it will take a while. So the cost maybe expensive.

Failing that get a manual and have a go yourself. And if you are stuck this place will be able to help you out.

    Have fun

PS Don't get rid of your old cables as well may come in handy if you have problems in the future...

Nope you can't cut them. They all come in differing lengths. Depending on what size bars you put on you may be able to get away with standard sizes. I put on standard size cables with my westerns and they fitted no problems. You can get brake lines made to measure. But throttle and clutch are made in different lengths to suit.

bet way is to settle on bars and get the cables to suit. Most of the shops will be able to give to the correct cable length for your bars. Do what Chaser said and go and see Burleigh Bars and get them to advise you on what you need.
