I know a really good one works from home in Armadale. Used to work for Ferrari & Porsche in europe doing their interiors.
He's not cheap - a reshape & recover costs about the same as a good aftermarket seat but for the money you get a unique seat that fits perfectly and looks good. A few of the blokes I ride with have been getting him to reshape their seats and cover in leather - he will carve any design you like in the leather.
I had mine done in the normal vinyl but lowered and reshaped, you fit the seat and ride around for a couple of days then go back and have it adjusted if need be. He quotes the price and thats what you pay - if you need it adjusted or want something changed its done - no questions asked.
The man is an artist, I'll post up some pics when I get home - still up north working.
If that doesn't work for you check out leatherroo's work on the forum here - they both do very similar work, but I'm pretty sure they're over east.

p.s - If you can't to Perth we can work something out - I catch up for a beer with some of the FIFO guys from 7 mile now and again
