Oil levels and sumps

Can someone please enlighten me .... in a normal engine, the sump holds all the oil, it is pumped up from there and returns to it. If you overfill, the crank starts splashing in the oil and it can get ugly.

With the softail engine, the oil resevoir is not in the sump, but under the seat. So what happends if you overfill a bit? Does it matter? What controls the amount of oil in the actual engine? Never having pulled a Harley engine down, I don't fully understand the flow.
