I have read a few posts regarding pipes for their sportster (namely VH Shorties over the sideshots) so thought I might be able to contribute. I just upgraded to the sideshots as these just did it for me over the short shots which most people seem to go for. I got the new black range for my Nightster. I would post pics but not sure how.
The V&H Sideshots with Fuel Mod and screamin eagle filter are loud and aggressive. My bike is much louder than most Harleys I have had the privillage of seeing, hearing and riding. I was totally blown away when I first fired her up. I have a link for those who are deciding on pipes. http://www.youtube.com/watch?v=qIOjcE_2Dkc - as you can see from the video I get blue flames out the end on the pipes on high revs. Not really sure if this means I have to adjust the fuel moduel. I get pops and cracks when I roll off at mid to high RPM....but I love that. I'll be getting the Baffles soon. This bike is a work horse meaning a ride in the city everyday so I would like to bring the sound down a little. Its a little offensive right now hahaha. I set off car alarms and scare this shit out of people getting in their cars in my apt. carpark at 8am.
Summary: V&H's Sideshots are a great buy and you WILL be very happy with them. It has changed my bike completely.

The short shots are a awesome pipe. They flow with the bike really well.
Last weekend I installed the quieter baffles as well. I have yet to make my mind up on the deeper sound. I've heard people say they get a deeper sound but mine hasn't seemed to change all that much. Maybe I need to give it a few more hundred Km's or maybe its the side shots. Not sure. Either way I do get better mid range like you say and she is a little quieter now (but still nice and loud).
Did you go the fuel moduel and bigger filter?
Yeah, ignore my last question. Just saw the pics of your bike...NICE! How do you rate the Hypercharger? Would I get more grunt out of the bike with a hypercharger instead of the screamin eagle air filter? (I am running the V&H Fuel pack...not the race tuner).

but as u got short pipes it looks ok
u could put some cones in to stop the flames and get the bit u lost of the line back , its just the way it is with vitualy straight out pipes

Congrats on the new bike mate. From my experience the Nightster has been awesome, I love it.
I am not sure if no fuel mod damages the engine. What I do know is that you will not get the highly improved rideability without giving the engine more juice (now that she is breathing better). I got my V&H fuel pack for $300; its a must do investment plus easy to install and set up...real easy. The other option is the HD race tuner but that goes for aprox. $900. The increased performance is great....it changes your bike for the better. I rode the stock set up for the first 2,500km before upgrading. The difference was startling. Awesome.
It may alter the warranty (self installed or dealer) if the problem is a direct result of the modified part. However, V &H have been working closely with HD for a while so these pipes are truly made for HD.
I don’t actually know for 100% certain that a side plate is illegal. I haven't seen it in writing but like you I have been told they are not legal. I have been in front of cops, beside them, parked next to them etc and had no issues so far. I have seen many other HD's and choppers with sides so I guess you just have to get an areshole cop to have a problem. Or if you are attracting attention to yourself being a hoone etc. I could always carry around a US HD catalogue and say its stock??
I was more worried about the sound of the pipes. THESE PIPES ARE LOUD......setting off car alarms...that type of thing. I have now installed the quieter baffles....they are great.
